It really depends on personal preference and how good your ears are lol. Personally I really don't notice that much of a difference on Headphones between 7.1 and regular stereo but that just me. The other consideration is what your budget is for a headset?
A decent 2.0 option is always the better choice. Virtual 7.1 can be free (Razer Surround) or included with a soundcard (Dolby, Xear, ...). Are you looking for headphones? What budget?
