Mine has always been shape changing. (which is probably exactly what you are calling atom bending ) I could be able to change into any person or creature or object that I want.

Ability to shift skin to adamantium (Like X-Men's Colossus) so I could go help out riot police. Bullets and bricks and rocks just bounce off me.

For me, it would be the ability to manipulate probability at will. Being able to influence events to be more probable or less probable as needed could be immensely useful.

Absolute tech genius. As a tech genius, you could build absolutely anything that would give you the respective superpower. Power suit to fly and for strength, time machine, portable teleporters... Nothing you couldn't figure out how to build.
